El queso forma parte de la dieta del ser humano desde hace más de 8.000 años y su producción es uno de los ejemplos más antiguos de la aplicación de procesos biotecnológicos a la elaboración de alimentos.
El inicio del queso parece situarse en el valle Fertile Crecent, ubicado entre los ríos Trigris y Eufrates en la antigua Mesopotamia (actualmente Irak), y probablemente ocurrió de forma accidental tras ser domesticados los animales productores de leche (ovejas, cabras, y, posteriormente, vacas).
La transformación de leche en queso se habría visto favorecida por el clima cálido de la zona, que provocó el crecimiento de la microbiota láctica, contaminante natural de la leche, con la consecuente producción de ácido y la coagulación espontánea de la leche (coagulación ácida) .
Por otro lado, el almacenamiento del producto resultante en vasijas habría permitido la separación del suero y cuajada. De sabor agradable, esta última podía ser consumida fresca o conservada más tiempo.
